Medium mussels in escabeche (8-12 pieces), steamed and preserved in an escabeche of oil, pimentón and vinegar that gives them the distinctive sweet-and-sour flavour so typical of Spanish canned seafood. They are one of the handiest aperitifs in the pantry: open the tin, drain off a little of the escabeche and they are ready to eat, with no further preparation. Their intense flavour, with a slight kick from the pimentón, makes them a classic to go with a small beer or a glass of well-chilled white wine. Enjoy them on their own with a cocktail stick, or on toast for a more elaborate aperitif. Once the tin is opened, keep them in the fridge for a couple of days in a closed container.
