Hacendado Bonito del Norte in Escabeche

Bonito del norte (albacore tuna) in escabeche, made with this variety of tuna with white flesh and a firm texture, cooked and preserved in an escabeche marinade of oil, pimentón and vinegar that gives it an intense, slightly tangy flavour. It is a more characterful alternative to bonito in oil, perfect if you want an aperitif with more personality. Enjoy it straight from the tin as an aperitif, on toast, or flaked into a salad for a different touch. The escabeche it is preserved in can also be used to dress the dish itself. Once the tin is opened, keep it in the fridge in a closed container for a couple of days.
