Toasted aged cheese, a blend of milks given a long cure that creates the golden, toasted colour of its paste and a concentrated, intense, slightly peppery flavour. The extended ageing produces small white specks (tyrosine crystals), a sign of a good cure, which also add a very distinctive crunch. This is a cheese for palates that already enjoy strong flavours, ideal for rounding off a cheese board with something more characterful than the young or semi-cured varieties. Serve it in thin shavings at room temperature, alongside quince paste or honey to contrast its intensity; it pairs beautifully with full-bodied red wines. Keep it in the fridge, well wrapped so it does not lose moisture.
